Welcome to this week's episode of Linnea Lund's Food Fridays where every Friday we share one of our favorite Swedish dishes for you and your loved ones to try at home. Every day should be a time to share and exchange recipes and traditions with family, friends and colleagues. That's why we want to share some of our Swedish culture with you!

Instructions:


Let’s start with the dough: Preheat your oven to 175 degrees (th.6). Line a rectangular pan with baking paper. In a bowl, cut the butter into pieces and add the flour, sugar and vanilla sugar then work the ingredients with your fingers. If you have a food processor, mix all the ingredients in it until you get a homogeneous dough. By hand, and with the help of a little flour, spread the dough in the pan and bake it for 15 minutes.

The cream: In the meantime, beat the eggs and sugar until white and fluffy. Add the flour, the lemon zest and juice. Pour the cream over the pre-baked base and bake for 20 minutes in the bottom of your oven.
After baking, let the pie sit in the pan for twelve hours. Before serving the pie, unmold it and cut it into squares that you then sprinkle with powdered sugar.

Ingredients: 


The pie dough:

  • 2.5 dl of flour
  • 0.5 dl of powdered sugar
  • 1 teaspoon of vanilla sugar
  • 150 g butter cut into small cubes

The Cream:
  • 3 eggs
  • 2 dl of powdered sugar
  • ½ dl of flour
  • juice and zest of one lemon
  • Powdered sugar for decoration
