Food Fridays : Sötpotatis och Morotssoppa
Welcome to this week's episode of Linnea Lund's Food Fridays where every Friday we share one of our favorite Swedish dishes for you and your loved ones to try at home. Every day should be a time to share and exchange recipes and traditions with family, friends and colleagues. That's why we want to share some of our Swedish culture with you!
Peel the carrots and sweet potatoes. Chop the onion and brown it in a pan for 5 minutes over medium heat. Slice the carrots and sweet potatoes and add them to the onions, then add the stock. Leave to simmer for 20 minutes. Add the finely grated ginger. Blend the soup in a blender.
Season with salt and pepper and garnish with chopped parsley before serving.
1 yellow onion
2 sweet potatoes
1 tablespoon grated ginger
1 litre of vegetable stock
2 tablespoons chopped flat-leaf parsley
