Must we really give up eating with pleasure when dealing with multiple food intolerances? Elise Dumas decided the answer was no. She made that choice over 15 years ago. Since then, she has searched, tested, experimented—and elevated recipes she didn’t want to keep to herself. She began sharing her culinary discoveries on her blog The Pineapple Chef, and in doing so, fell in love with the art of staging. Her blog became a beautiful platform for inspiring, flavorful dishes. We especially recommend her salad with cockles, mojettes, chorizo & fresh herbs—a delicious reminder that not all is lost for those who, like her, must navigate food intolerances.
