Finska Pinnar: Authentic Swedish Butter Cookies Recipe

Ingredients
- 5 dl all-purpose flour (about 2 cups)
- 1 dl sugar (about ½ cup)
- 200 g butter, room temperature (7 oz)
For glazing and decoration:
- ½ to 1 egg white
- Pearl sugar
- Chopped sweet almonds
Instructions
- Mix the flour, sugar, and butter until you get a smooth, homogeneous dough.
- Let the dough rest in the fridge for about 1 hour to firm up.
- Preheat your oven to 175°C (347°F). Roll the dough into logs, about the thickness of a finger.
- Cut into pieces roughly 5 cm (2 inches) long to form the "pinnar" (sticks).
- Place them on a greased or parchment-lined baking tray.
- Gently brush each cookie with beaten egg white.
- Generously sprinkle with pearl sugar and chopped almonds.
- Bake in the middle of the oven for about 8 minutes, until lightly golden.
