The Swedish recipe for Midsommartårta
Summer has arrived, bringing with it a craving for freshness, sweetness, and indulgence! In Sweden, there's a dessert that perfectly combines all these ingredients: Midsommartårta! A delicious strawberry cake with a cream base, which Charlotte loves in a layer cake version. So we invited the radiant Caleigh Megless, whom we adore for her veggie cuisine, which she delights us with in her restaurant Keïli, to offer us her version of this essential summer dessert to enjoy with family, friends, or simply to treat yourself.
For the occasion, she wore our long, lightweight Mia dress made of cashmere and silk. A straight cut with a pretty side slit and a tank top armhole. Absolutely perfect for the season!
Ingredients for Midsommartårta
Ingredients for the cake batter:
▢ 2 cups of plain yogurt
▢ 1 packet of baking powder
▢ 1 cup of canola oil
▢ 4 cups of granulated sugar
▢ 6 cups of flour
▢ 4 eggs
Frosting Ingredients:
▢ 1 cup of heavy cream
▢ 1 tablespoon of sugar
Fruits:
▢ Strawberries, raspberries, blueberries (as much as you like)

The recipe for the Midsommartårta
Cake Preparation:
1. Preheat the oven to 180°C (350°F).
2. In a large mixing bowl, combine the ingredients in this order: Yogurt + baking powder, Oil, Sugar, Flour, Eggs.
3. Pour the batter into a greased cake tin.
4. Bake for about 50 minutes.
5. Check doneness with a knife – it should come out clean.
6. Let the cake cool completely at room temperature before assembling.
Frosting Preparation:
1. In a very cold bowl, combine the cream and sugar.
2. Whip until you get a thick and smooth texture, like soft whipped cream.
Assembly:
1. Once the cake is fully cooled, slice it horizontally into 3 even layers.
2. On the first layer: spread a generous layer of whipped cream, add red berries (cut if needed).
3. Place the second layer on top and repeat: cream + berries.
4. Finish with the final layer, then decorate the top with the remaining cream and fresh berries.
