Finska Pinnar: Authentic Swedish Butter Cookies Recipe

Ingredients

  • 5 dl all-purpose flour (about 2 cups)
  • 1 dl sugar (about ½ cup)
  • 200 g butter, room temperature (7 oz)

For glazing and decoration:

  • ½ to 1 egg white
  • Pearl sugar
  • Chopped sweet almonds

Instructions

  1. Mix the flour, sugar, and butter until you get a smooth, homogeneous dough.
  2. Let the dough rest in the fridge for about 1 hour to firm up.
  3. Preheat your oven to 175°C (347°F). Roll the dough into logs, about the thickness of a finger.
  4. Cut into pieces roughly 5 cm (2 inches) long to form the "pinnar" (sticks).
  5. Place them on a greased or parchment-lined baking tray.
  6. Gently brush each cookie with beaten egg white.
  7. Generously sprinkle with pearl sugar and chopped almonds.
  8. Bake in the middle of the oven for about 8 minutes, until lightly golden.
